Coffee Lemon Marinade

Sound strange, but its particularly effective for old barnyard birds that have passed their prime. If placed in this marinade and left to sit in the refrigerator for several days, they just might be chewable if slowly cooked!


Coffee Lemon Marinade


  • 1 bird (3-8 lbs)
  • 1/2 C pre-ground coffee (recipe has not been tested with freshly-ground coffee)
  • juice of 3 large lemons (at least 1/2 C)

Directions: juice fresh lemons and mix with coffee grounds. Rub the mixture all over bird and then place in a zip-loc bag, being sure to seal. Set on large plate or pan in case of leakage. Keep in refrigerator for 3 days, turning each day. When proper time has been accomplished, remove and rinse off coffee grounds. Be sure to rinse well.

Place bird in a slow cooker with breast down. Add water or chicken broth until it comes 1-2 inches up the sides of crock. Cook on low for 8 hrs and then enjoy your tenderized bird!
