Want a raspberry flavored, sweet and yet healthy drink? Try out raspberry kvass! It can be made with fresh-from-the-bush berries or even summer’s fruits stashed away in the deep freeze for winter season. Raspberries are rich and delicious in flavor, full of anti-oxidants and if looking to bring a natural fruit juice replacement into the home, you may have just discovered a good option. Be sure to use raw honey as your natural sweetener!
- 1-1 1/2 C raspberries
- 1 Tbs raw honey
- non-chlorinated water
Directions: Place honey in the bottom of a 1 quart (1 litre) jar. Add berries and fill jar with water to the top of its shoulder. Put a sealing lid in place (such as a canning lid with band) and tighten. Store in 60-70F (15-21C) for proper fermentation. Gently shake every day to keep fruits on top from being exposed to oxygen for too long and to help berries release their juices. When foam-like bubbles appear on the surface of the liquid, it has begun fermenting! As it carbonates, berries will be pushed upward and toward the surface. Test every other day and when happy with the results, strain out berries, add a wee bit more natural sweetener (such as stevia drops or honey) and refrigerate to stop fermentation. Serve over ice.
